Our Story Begins In 1248
Nearly 800 years ago, in medieval Paris, King Louis IX of France — later known as Saint Louis — ordered the establishment of professional guilds.
Among them was the guild of the Ayeurs — the goose roasters.
The guild’s purpose went far beyond roasting. It was created to preserve, develop and pass on the knowledge and skills of apprentices, tradesmen and masters.
This marked the beginning of an extraordinary culinary tradition from which, over the centuries, the heritage of today’s Chaîne des Rôtisseurs would evolve.
Nearly eight centuries later, that same spirit continues to bring us together: culinary excellence, professionalism, the culture of the table, fellowship, and the pleasure of sharing good food and fine wine.
